 ROAST CHICKEN WITH LEMON & FRESH HERBS RECIPE – A Favourite Of Chef Raphael’s Mum

Serves 4

INGREDIENTS

1.3kg whole chicken
Salt and pepper
2 sprigs Rosemary
2 fresh Sprigs Thyme
3 Garlic cloves
1 Lemon (cut into 4)

METHOD

STEP 1

Pat dry the whole chicken with a paper towel before adding salt and pepper all over the whole surface.

STEP 2
Place the lemon, herbs and garlic in the chicken cavity.

STEP 3
Skewer the chicken in the rotisserie rod of the oven and place it into the oven and turn on the rotisserie function and set the heat at 200ºC.

STEP 4
Cook for about 40 minutes or until the chicken is evenly browned and no pink juices oozing from a small cut on the thigh joint.

STEP 5
Remove from the oven and rest the chicken for about 10 minutes before serving.
