POTATO PAKORAS (servings for 4)

INGREDIENTS

3-4 medium-sized potatoes (peeled & sliced)
1½ cup gram flour (besan)
1½ tbsp cornflour
1½ tbsp ginger garlic paste
2 tsp chaat masala
2 tsp salt (salt to taste)
2 tsp yoghurt
1 tsp chilli powder
1 tsp mango powder
Oil for frying

METHOD

STEP 1
In a large bowl sieve the gram flour & cornflour together, then add in the ginger garlic paste, chaat masala, salt, yoghurt, chilli powder & mango powder & mix well. Add water slowly to this to make a thick consistency batter. (Batter shouldn’t be runny).

STEP 2
Add oil to a big wok or karai and once hot (you can check by dropping in a drop of the batter & when the batter rises, the oil is ready for frying).

STEP 3
Dip your potato slices in the batter & carefully fry them in the wok till golden brown. (Avoid adding too many slices at once as they will clump together and not cook evenly).

Enjoy your hot pakoras with a chutney of your choice or ketchup!
