This is also a perfect dessert for when you have guests over as it’s quick and easy to prepare to make it more appealing you can serve these with vanilla ice cream and strawberries just like our Chef who has plated it beautifully and transformed it into a stunning dessert!

PINEAPPLE FRITTERS

PINEAPPLE FRITTERS RECIPE
INGREDIENTS
45g sugar
115g flour
150ml milk
1 whole egg
1 egg separated
1 pineapple sliced and cored into 1.5cm thickness
METHOD
STEP 1
In a clean bowl, place the sugar, flour, milk egg, and egg yolk and mix to make a smooth batter making sure no lumps remain.
STEP 2
In another clean dry bowl, whisk the egg white until it doubles in volume and forms soft peaks when you lift the whisk. It should take about 3-4 minutes when whisking manually and about 1 minute if using an electric mixer.
STEP 3
Fold the egg white into the batter taking care, not to over mix, and basically stop mixing when all egg white is combined into the batter.
STEP 4
Make sure the sliced pineapples are dry on both sides by absorbing the juices using a paper towel.
STEP 5
Dip the sliced pineapple into the batter then dip slowly into a fryer with oil at 180ºC. Allow for the pineapple to get an even golden brown colour on both sides then remove from the oil and place on a plate lined with a paper towel.
Serve the pineapple warm with some ice cream on the side & enjoy!!
