 MINTED PEA SOUP RECIPE

INGREDIENTS

1/2 kg blanched peas
Oil/butter/margarine
1 small onion
3 cloves garlic
1 carrot(diced)
1 stalk celery(diced)
750ml water
Salt and pepper (according to taste)
Small bunch mint(chopped)

METHOD

STEP 1

Use peas that are soft and young when making soup. When blanching the peas, avoid overcooking them since you will still cook them in the soup.

STEP 2
In a non-stick pot, cook the onion and garlic with little oil until soft, on low heat for about 2 minutes. Add the chopped celery and carrots and cook for a further 1 minute before adding the blanched peas.

STEP 3
Add the water and increase the heat to high so as to bring the liquid to a boil. Add your salt and pepper at this stage.

STEP 4
When the water is boiling reduce the heat to just simmer and cover the pot. Cook for about 15 minutes or until all the vegetables are soft. Add the chopped mint at this stage.

STEP 5
Turn off the heat and when slightly cooled, blend the soup until smooth. Return to the heat, taste and adjust the seasoning and serve hot with an optional dollop of cream. Garnish with a mint leaf.
