MALAI TIKKA
MALAI TIKKA RECIPE Chef Aakshar’s Mum’s Favourite
INGREDIENTS
1kg boneless chicken breast
1 cup fresh milk cream or normal cream whipped to soft peaks
1/2 cup fresh curd or yoghurt beaten
2 teaspoon freshly powdered cardamom
2 tablespoon lemon juice
2 tablespoon fresh ginger paste
2 tablespoon garlic paste
Salt & pepper to taste
METHOD
STEP 1
Cut chicken into bite-size pieces.
STEP 2
Rub the garlic, ginger, salt, pepper and lemon juice and let sit for 45mins-1hr in the refrigerator.
STEP 3
Mix the cardamom powder, cream and yoghurt together then and add in the chicken pieces and let it marinate 2hrs or overnight.
STEP 4
Preheat the oven to 220C and cook the chicken for about 30mins but keep basting with butter to avoid drying the chicken. Alternatively, you can cook them in a hot non-stick pan (don’t add oil as the marination will separate).
Serve Hot With Chips Or Naan Bread!
