LOVE CONCOCTION ‘A Carrot & Peach Soup Dessert’ RECIPE (1 serving)

INGREDIENTS FOR THE YOGHURT

1 pint of plain yoghurt

METHOD

Hang plain yoghurt in a muslin cloth overnight.

INGREDIENTS FOR THE PICKLE

Carrots
1dl of water
1dl of sugar
1-2 star anise broken into halves

METHOD

STEP 1
Slice very thin slices of carrots for pickle. (Use enough of carrots to fill a 350gm jar)

STEP 2
For the pickle juice use 1 dl of water and the same amount of sugar and a couple of star anise broken in half.

STEP 3
Place the sliced carrots in the pickle and allow it pickle at least overnight.

INGREDIENTS FOR THE CARROT & PEACH SOUP

Carrots ( Approx 300gm to make the soup)
1dl of Peach liqueur
1dl of fresh carrot juice

METHOD

STEP 1
Sous vide carrots for like 2 hours with a peach liqueur.

STEP 2
Once the carrots have cooked in sous vide for 2 hours put those with the juice inside in a blender and mix with carrot juice to get a thick liquid.

STEP 3
Refrigerate this carrot soup overnight.

INGREDIENTS FOR GARNISH

Merengue (Approx 1tbsp crunched)
Crushed biscuits (Approx 1tbsp)
1 scoop of Jerusalem Artichoke (optional)

PLATING

STEP 1
Prepare the meringue a day before, alternatively, you can use ready-made meringue.

STEP 2
First, put a ladle of carrot soup then add a quenelle of hung yoghurt.

STEP 3
Chop up some nice crunchy biscuits and spread on top.

STEP 4
Decorate with pickled long slices or carrots and finish by crunching a meringue on top of that.

STEP 5 (Optional)
For that extra love, add a scoop of homemade Jerusalem artichoke ice cream.
