Lemon & Coconut Flavoured Pancakes

LEMON & COCONUT FLAVOURED PANCAKES
LEMON & COCONUT FLAVOURED PANCAKES (6-8 SERVINGS)
INGREDIENTS
1 cup all purpose flour
2-3 tablespoons sugar
2½ teaspoon baking powder
½ teaspoon salt
1 – 1¼ cup full cream milk
1 egg
1½ teaspoon vanilla essence
Rind of 1 whole lemon
Juice of 1 whole lemon
¼ cup desiccated coconut
2-3 tablespoon melted unsalted butter or cooking oil
3-4 tablespoons cooking oil for frying
METHOD
STEP 1
In a bowl add the dry ingredients namely flour, baking powder, salt & sugar (NOTE: make sure you sift the flour and baking powder to avoid lumps). Then mix using a fork and make a well, pour milk gradually to combine the dry ingredients.
STEP 2
In a separate bowl break an egg and add in the vanilla essence then beat lightly using a fork. Add this mixture to the bowl with the flour and milk and mix with the fork. Then add the lemon zest and juice and mix. Now add the melted butter or oil and mix. Finally add the desiccated coconut and mix. (NOTE: The consistency of your batter should not be too runny, you can always adjust by adding a little flour or if too doughy you can add in some milk).
STEP 3
Use a non-stick frying pan, add a tablespoon of oil then using a ladle (not too big), pour the pancake mixture once oil is a little hot & cook on low to medium flame. Once you notice bubbles flip the pancake and allow to cook on the other side. You can even use a glass lid to let the pancakes cook properly. Once golden brown you know your pancakes are ready to devour!
Serve hot, ready to eat or serve with a dollop of butter, fresh cream, honey or maple syrup!
