Swordfish Indonesian Recipe

INGREDIENTS

1 sword fish steak 1inch thick
1/4 of (each)- capsicum, carrot & red onion (cut in julienne)
3 cloves garlic (cut in julienne)
1/2 fresh root ginger (cut in julienne)
1 tsp fish sauce
2 tbs light soya sauce
1 tsp sugar
1-2tbs peanut oil for frying
1 tsp corn flour

PREPARE A DAY BEFORE– Marinate fish overnight in 1 tbs ginger, garlic & soya sauce.

METHOD

 Heat a skillet add some peanut oil & shallow fry the fish only for a few minutes, make sure you don’t overcook the fish.
In a separate pan add 1 tsp of peanut oil, saute carrots & ginger, then add onions, capsicum & garlic and barely soften them. Now add 2tbs soya sauce and 1 tsp fish sauce and sugar (to balance off the saltiness of soya sauce).
Mix 1 tsp corn flour in a bit of water in a bowl, then pour over the veggies and cook for a few minutes.
Transfer the cooked fish onto a plate & pour the sauce with veggies over the fish & serve with a lemon wedge!
