HOMEMADE VANILLA & CHOCOLATE ICE CREAM & BROWNIE SUNDAE RECIPE
INGREDIENTS FOR CHOCOLATE ICE CREAM
32g dark chocolate (chopped into small pieces)
200ml whipping cream
2 egg whites
60g sugar
INGREDIENTS FOR VANILLA ICE CREAM
2 egg yolks
2 tbsp water
200ml whipping cream
60g sugar
Vanilla extract (0r 5-6 drops of vanilla essence)
METHOD FOR THE CHOCOLATE ICE CREAM
STEP 1
Start by measuring 60g of the whipping cream and place in a microwave-safe bowl.
STEP 2
Add the dark chocolate to the cream and place in a microwave for 10-15 seconds to heat the cream enough to combine with the chocolate. To do that, just stir until the chocolate has completely mixed with the cream.
STEP 3
The mixture should not be hot and in case that happens, place in the fridge/freezer to get it cold.
STEP 4
In a clean bowl whisk the whipping cream while it’s cold with half of the sugar until it becomes firm with soft peaks or holds onto the whisk when you lift it.
STEP 5
In a clean bowl, whip the egg whites at room temperature for 1 minute or until it starts to be firm.
STEP 6
Add the other half of the sugar to the egg white and continue whisking until it becomes stiff with soft peaks.
STEP 7
Take the chocolate mixture and add a little of the whipped cream to make it lighter. Add that mixture to the whipped cream and fold until it’s fully mixed.
STEP 8
Finally, add the egg white to the cream and fold until it’s fully mixed.
STEP 9
Pour the mixture into a bowl or container and cover then place in the freezer for at least 4 hours ready to serve.
METHOD FOR THE VANILLA ICE CREAM
STEP 1
Whisk the whipping cream while cold in a clean bowl with half of the sugar until it firms up with soft peaks.
STEP 2
In a clean bowl, combine the egg yolks with the water and half of the sugar and place the bowl in a bigger bowl with warm water.
STEP 3
Whisk the yolks until they become pale in colour and thick like the whipped cream. The warm water will aid in making the yolks aerated and warm but towards the end when the yolks get warm you can remove from the water and whisk until the yolk is completely cool.
STEP 4
Add the vanilla to the cream and mix then add the yolk mixture into the cream and fold until fully mixed.
STEP 5
Pour the mixture into a bowl or container and cover then place in the freezer for at least 4 hours ready to serve.
STEP 6
To serve use an ice cream scoop dipped in hot water and serve plain or with chocolate brownie and berries as a dessert.

To Assemble The BROWNIE SUNDAE:
Cut the brownie into square-shaped pieces, then in your desired dessert bowl or glass place some pieces, then add a scoop of ice cream of your choice then add some more pieces and top off with some more ice cream. You can add some chocolate sauce and garnish with nuts, fresh raspberries, whipped cream or any other toppings of your choice!
