GRILLED SALMON WITH CREAMY MUSHROOM & THYME SAUCE
GRILLED SALMON WITH CREAMY MUSHROOM & THYME SAUCE RECIPE
Serves 2
INGREDIENTS
2 salmon slices
Salt & pepper (to season the fish)
Oil
INGREDIENTS FOR THE SAUCE
1 cup sliced mushrooms
1 onion (chopped)
2 garlic (chopped)
Thyme (a few sprigs)
1 tsp mustard
Salt and pepper (to taste)
300ml cream
METHOD FOR THE FISH
STEP 1
Preheat the grill/pan and allow it to get hot.
STEP 2
In the meantime, season the fish on both sides generously with salt and pepper then drizzle with a little oil.
STEP 3
Place the fish on the grill/pan and allow to cook for about 3 minutes. Turn to cook the other side for a further 3 minutes or until it is cooked through. (Note: The cooking time will depend on the thickness of the fish you have.)
METHOD FOR THE SAUCE
STEP 1
For the sauce, fry the onion, garlic and mushrooms until lightly browned, then add the thyme and stir.
STEP 2
Now add the cream, seasoning and mustard. Allow the sauce to simmer, adding a little water to make the sauce light if gets too thick.
Serve the fish on a plate & pour the sauce on top!
