GREEN TEA MOUSSE RECIPE
INGREDIENTS
500g cream (whipping cream)
4 egg whites beaten stiff
200g more whipped cream
6 green tea bags
100g sugar
30g gelatin
Green colour
220g milk
METHOD
STEP 1
Whip 200ml of cream to the stiff peaks.
STEP 2
On the side with whip the 500g cream, till stiff. Don’t overdo it or else it will coagulate.
STEP 3
Whip egg whites till stiff peaks form, then gently fold into the cream.
STEP 4
Strain the green tea and add it very slowly to the eggs and cream mixture and fold gently.
STEP 5
Mix the gelatin with warm water then add it into the mousse mixture.
Refrigerate for at least 2 hours before serving!
