FLOURLESS COFFEE CAKE
FLOURLESS COFFEE CAKE RECIPE
INGREDIENTS
2 cups (340g) semisweet or bittersweet chocolate chips
16 tablespoons (226g) unsalted butter, room temperature
300g granulated sugar
1/4 teaspoon salt
4 teaspoons espresso powder
1 teaspoon vanilla extract
6 large eggs
1 cup (86g) cocoa powder
METHOD
STEP 1
Preheat the oven at 190°C. Lightly grease an 8″ round cake pan; cut a piece of parchment to fit, grease it, and lay it in the bottom of the pan.
STEP 2
Place the chocolate and butter in a microwave-safe bowl, and heat until all is melted.
STEP 3
Stir in the sugar, salt, espresso and vanilla into your melted mixture.
STEP 4
Next, add in the eggs and beat the mixture, then add in the cocoa powder and mix.
STEP 5
Pour the cake mixture into your greased cake pan & bake the cake for 25-35mins between 93-120°C (depending on the oven). Once ready and cooled remove on a serving dish.
Garnish with your desired toppings & serve!
