DAHI VADA (servings for 3-4)
INGREDIENTS
1 cup urad daal (Indian Lentils) (soaked for at least 2 hours)
1½ cup yoghurt
½ cup of water
1 green chilli
2 tsp crushed freshly roasted cumin seeds
1 tsp chaat masala
½ tsp red chilli powder
½ tsp amchur powder (dry mango powder)
Salt to taste
2 tbsp tamarind sauce
Oil for deep frying
METHOD
STEP 1 (For The Batter)
In your grinder add the urad daal, green chilli, 1tsp of roasted cumin, salt to taste & 3-4 tbsp of water & grind into a batter.
STEP 2
In a non-stick karahi or a wok, add the oil. Once hot take a tablespoon of the batter and add it to the oil. Add As many as the karahi allows, do not overcrowd. Fry these on medium flame. Once golden brown, add the vadas directly into a bowl of drinking water and allow to soak for 5-10 minutes.
STEP 3
Take a large bowl & add the yoghurt, water, salt to taste & mix well. Now squeeze the water from the vadas gently by pressing each vada in between your palms & add to the yoghurt mix. Make sure all vadas are soaked properly in this yoghurt mixture. (If need be you can always add more yoghurt).
STEP 4 (Garnish)
Lastly, sprinkle over the vadas soaked in the yoghurt 1 tsp roasted cumin powder, chilli powder, amchur powder, chaat masala & the tamarind sauce and serve!
