CHOCOLATE CUPCAKES

CHOCOLATE CUPCAKES RECIPE
INGREDIENTS
240ml(1 cup) milk
2 eggs
240ml(1 cup) water
120ml(½ cup) oil
1 tsp vanilla essence
245g plain flour (all purpose)
400g sugar
1½ tsp baking powder
1½ tsp baking soda
75g cocoa powder
METHOD
STEP 1
In a bowl, mix all the wet ingredients, in this order; eggs, milk, oil, water and vanilla essence. Mix everything together and set aside.
STEP 2
In a separate bowl, mix the dry ingredients starting in this order; cocoa powder, flour, baking soda, baking powder. Sieve the mixture then add sugar and mix.
STEP 3
Make a small hole (well) at the centre of the flour mixture and pour in the wet ingredients at the centre. When done the mixture will be slightly thick but make sure all flour is mixed through.
STEP 4
Set up the cupcake tin with paper, then carefully pour into the paper. Using an ice-cream scoop will help in having equal amounts of the mixture for each cup cake alternatively, you may use a small jug. Fill each cup to half way to allow room for the cupcake to rise.
STEP 5
Bake in a preheated oven at a temperature of 180 degrees.
STEP 6
After about 15 minutes, the cakes will be done. They should have a crust and a small knife inserted into the cake should come out clean. Set aside & allow to cool down.
