CHILI TOMATO SOUP RECIPE
INGREDIENTS
2 tbsp olive oil
1 large onion, peeled and chopped
3 sticks of celery, chopped
4 red chilli, seeded and finely chopped
2 cloves of garlic, crushed
700g chopped tomatoes
500ml vegetable stock
METHOD
STEP 1
In a large pot heat the olive oil. Add the onion, celery, chili and garlic. Cook until the vegetables are soft then add the tomatoes, water or stock & bring to a boil.
STEP 2
Reduce the heat and let simmer for 20 mins then let it cool. Place in a blender and blend till you achieve a thick smooth consistency.
Optional: You can garnish with avocado & sour cream
Serve hot with your cheesy garlic bread!
