CHICKPEA & COCONUT CURRY RECIPE
INGREDIENTS
1/2 cup water
4 cups of chickpeas
400ml coconut cream
2 cups tomato purée
2 onions sliced
Salt to taste
Pepper to taste
Cinnamon
3 Chillies chopped
Oil
METHOD
STEP 1
In a pressure cooker add some oil and let it heat up then add the chillies and the onions and cook then add the cinnamon and continue cooking until onions are golden brown.
STEP 2
Add the tomato purée, water and chickpeas and seal & let it cook for about 15 mins.
STEP 3
Allow the pressure cooker to cool down completely before opening.
STEP 4
Add the coconut milk and season with salt & pepper & let it cook for a further 10 mins.
Serve Hot with Chapatti or Rice! Happy Diwali!
