This Sunday is Father’s Day & what better way to surprise your papas, than with Chef Aakshar Joshi’s Chicken Kiev. This is Chef Aakshar’s dad’s favourite dish and if you are looking to surprise your dad this Father’s Day, we promise you this is the dish to try. This succulent chicken is definitely worth all the effort, especially after you notice your dad smiling as he has the greatest chicken experience of his life. It will be the greatest, not just because of the taste but because you took the effort to make him something special! CHICKEN KIEV
CHICKEN KIEV RECIPE
INGREDIENTS
4 cloves of garlic, minced
2 pinches of salt & pepper to taste
4 tbs chopped fresh flat-leaf parsley
12tbs unsalted butter
8 (8 ounces) skinless, boneless chicken breast halves, pounded to 1/4-inch thickness
2 cup all-purpose flour
4 tsp salt
4 eggs, beaten
4 cups bread crumbs
1 pinch cayenne pepper
2 cups vegetable oil for frying, or as needed
METHOD
STEP 1
Pound garlic add a pinch of salt mix with the butter add parsley and refrigerate till needed (make sure it’s cold)
STEP 2
Season chicken breasts with salt and pepper. Place 1/4 the butter mixture in the centre of the wider end of each chicken breast. Fold the narrower end of each chicken breast up, over the butter, to form a tight pocket around the butter. Gather the sides of each chicken breast to the centre to form a round ball. Tightly wrap each chicken breast ball in plastic wrap, place the wrapped breasts to chill in the freezer until it’s firm (this should take about 45mins).
STEP 3
Mix the flour and 2 teaspoons of salt together in a bowl, in another shallow bowl whisk eggs together and in a 3rd bowl put the bread crumbs.
STEP 4
Remove the chicken and coat in this order: flour, egg, and finally breadcrumbs until fully coated. Then wrap and freeze for about 20mins
STEP 5
Remove the chicken and deep fry until golden brown.
STEP 6
Wrap in foil and bake in a pre-heated oven of 75c for about 20 mins just until the butter starts to sizzle.
Serve hot with spinach!
