Cooking With A Twist: Bringing To You Recipes From Our Brilliant Chef, Chef Aakshar

If you are craving something Italian then you are in for a treat this week! Chef Aakshar Joshi’s Chicken Cacciatore is a dish full of incredible flavours. This classic Italian dish is made with juicy chicken cooked in a delectable tomato sauce with herbs, onions, bell peppers and can be devoured with pasta.

 CHICKEN CACCIATORE RECIPE

INGREDIENTS

2 chicken breasts with skin and backbone, halved
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1 cup all-purpose flour, for dredging
3 tablespoons olive oil
1 large red bell pepper, chopped
2 onions, chopped
4 garlic cloves, finely chopped
3/4 cup dry white wine (optional)*can use grape juice diluted
4 diced tomatoes
3/4 cup reduced-sodium chicken broth
3 tablespoons drained capers
3 teaspoons dried oregano leaves
1/2 cup coarsely chopped fresh basil leaves

METHOD

STEP 1
Sprinkle the chicken pieces with 1 teaspoon of each, salt and pepper then coat with flour lightly.

STEP 2
In a large hot cooking pot, add oil and pan fry the chicken on each side until it’s brown then transfer the chicken to a plate and set aside.

STEP 3
In the same pot add the bell peppers, onion and garlic and sauté until the onions are tender (about 7mins), then add the salt and pepper and the wine or juice and let it simmer for about 5 mins.

STEP 4
Add the tomatoes with its juice, the chicken broth, cappers and oregano & let it cook for about 3 mins.

STEP 5
Now add the chicken pieces and bring the sauce to a simmer for about 40 mins until the chicken is cooked and sauce thickens.

Garnish with the basil leaves & serve hot!
