Beef Shami Kabab – H&S Recipe Of The Week

Beef Shami Kabab

The traditional Beef Shami Kabab is a perfect non-vegetarian snack that can be enjoyed as a starter or a tea-time snack. It’s made from either beef or chicken mince with chana dal (a yellow coloured split lentil) & spices which make up the perfect filling inside & is fried with a crispy outer covering. You can enjoy this on its own or with green chutney that is made from chillies, coriander & mint!

INGREDIENTS

500g beef mince (you can use chicken)
½ cup chana dal (soaked for at least 1 hour in water then drain water)
2 tbsp ginger paste
1 tbsp garlic paste
1 tsp garam masala
½ tsp mango powder
1 tsp salt (salt to taste)
10 round red dry chillies
2 tbsp oil
1½ cup of water
2 tbsp cornflour
1 egg
Oil to shallow fry the kababs
1 egg beaten for frying the kabab

METHOD

STEP 1
On a medium-high flame, in a non-stick pot saute the ginger paste, garlic paste, garam masala, mango powder, salt & dry red chillies in oil for 1-2 minutes. Then add the mince & chana dal & saute for another 1-2 minutes until all is mixed well.

STEP 2
Add the water to the mixture & bring it to boil. Lower the flame and cook for 15 minutes on low flame covered with a lid. Remove the lid after 15 minutes & let it cook on high flame until all water is evaporated. Take off heat & allow to cool.

STEP 3
Put the cooled mixture into a blender & add 1 egg & cornflour & grind it into a thick paste. Using your hands take some of this paste & make kababs of desired shape & size (generally a round flat shape).

STEP 4
Dip each kabab in the beaten egg. In a non-stick pan, heat the oil & shallow fry the kababs on medium flame until golden brown on both sides!
Serve hot with green chutney or any other chutney of your choice!
