BANANA FLAMBE RECIPE

INGREDIENTS (2 Servings)

2 ripe bananas
3 tablespoons sugar
Juice from half a lemon
2 tablespoons margarine/butter
1 orange (juice and rind)
30ml brandy/rum/whisky (optional)

METHOD

STEP 1
Peel the rind from half the orange using a peeler to get the thinnest pieces. Cut the orange and squeeze out the juice and set aside. Next, cut into thin strips using a sharp knife & cut into small dices and set aside.

STEP 2
Peel the bananas and cut into 2 equal halves.

STEP 3
Melt a little butter/margarine (just enough to cook the bananas) on a medium heat.

STEP 4
Place the bananas to cook on the first side on medium heat until they are browned. Allow for the second side to cook and brown as well. Be careful not to overcook as they will get too soft and mushy. When browned set aside on a small plate.

STEP 5
Add a little more butter/margarine to the pan and allow to melt. Now add in the sugar, then stir and allow to cook for a few seconds. Next add the orange juice and add a little lemon juice.

STEP 6
Add the orange rind, Allow to simmer slowly until it reduces. It should be slightly thick

STEP 7
Finally add in the brandy/whisky/rum but take care not to ignite when using an open flame on your cooker. If you don’t like the alcohol, skip it but make sure the sauce is runny before serving. To ignite the alcohol, light a match and place near the pan.

STEP 8
Stir the sauce as the flames burns away the alcohol. The flame will light for a few seconds. When it goes out allow for the sauce to thicken again then pour the sauce on top of the bananas.

Serve Immediately While Hot, With A Scoop Of Ice Cream Or Whipped Cream & Enjoy!
