This week Chef Aakshar has a popular dish from the Philippines known as the Adobo Chicken for you to try. Adobo comes from a Spanish word adobar which means marinade or sauce. It is one of the 4 main traditional cooking methods that use vinegar. ADOBO CHICKEN
ADOBO CHICKEN RECIPE
INGREDIENTS
8 boneless chicken breasts
2 cups of soy sauce
1 cup white wine vinegar
2 cups of water
4 tsp garlic puree
6 bay leaves
2 small onion, sliced in large slices
freshly ground black pepper to taste
pinch of chilli powder
Olive oil for frying
METHOD
STEP 1
Combine the soy sauce, vinegar, water, garlic, bay leaves, onion, pepper, and ground chilli powder to form the Adobo mixture.
STEP 2
Place the chicken in a single layer frying pan and pour the mixture over it and cook for 10 minutes on low heat.
STEP 3
Turn the chicken and continue cooking for another 15mins.
STEP 4
Strain the liquid to remove onion pieces and bay leaves. I used a fat separator (like a pitcher where the spout comes from the bottom) with a yoghurt strainer on top.
STEP 5
In a cooking pot pour in the strained sauce and let it reduce until thick.
STEP 6
In a frying pan fry your chicken in some olive oil until brown.
Serve with your adobo sauce and garden salad!
